The purpose of a narrow sole is to make it easier to cut into the grass get the sole under the ball. The higher sole bounce is to prevent the club head from digging too deep. This narrow-high bounce type of sole design is especially effective for thick and tangled grass, such as Bermuda.
Sole bounce is help lift the club head up from the ground. The amount of sole bounce is only meaningful when we are also considering the width of the sole. For example, if we were to put an 8 degree sole bounce on a very wide sole such as Infiniti Assure iron, the width of the sole will push the leading to be (too) high from the ground and thus made it difficult to get under the ball to launch it up in the air. (Assure #6 iron sole bounce is 0 degree) On the other hand, if we were to put a 0 degree or lower amount of sole bounce on a narrow sole such as this Infiniti Hot Shot iron, the narrow sole design would make it very easy to cut into the grass, but would also have a tendency to cut too deep into the ground and thus the club head might got stuck.
